normal is pretty much whwat you want. add or sub change the color palette (or something like that)... one of them inverts the color (or at least makes it dark - not sure which one that is, though) and i don't remember what the other one does. pretty much you don't generally need to mess with those (unless other people know how to use them well)

For music, I recommend JAMENDO.  Most of the music is licensed Creative Commons, if not all.  There is great quality music.  Check each album or track's license terms carefully before using, though.  The Creative Commons licenses' usage terms vary.
Lots of good "fantasy video game soundtrack" type of music in there.
